Description
Banana Pancakes turn ripe bananas into a warm, fluffy, and naturally sweet breakfast treat. These golden pancakes are easy to make and perfect for weekend mornings or a cozy brunch.
Ingredients
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup buttermilk (or milk + 1 tbsp vinegar)
1 large ripe banana, mashed
1 large egg
2 tablespoons melted butter or vegetable oil
1/2 teaspoon vanilla extract
Butter or oil for cooking
Instructions
1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.
2. In another bowl, mix buttermilk, mashed banana, egg, melted butter, and vanilla.
3. Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
4. Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil.
5. Scoop 1/4 cup of batter for each pancake onto the skillet.
6. Cook until bubbles form and edges look set, about 2–3 minutes.
7. Flip and cook another 1–2 minutes until golden brown.
8. Serve warm with maple syrup, fresh banana slices, or chopped nuts.
Notes
Use extra-ripe bananas for best flavor.
Add mini chocolate chips or blueberries to the batter for variation.
Store leftovers in an airtight container and reheat in the toaster or microwave.
