Description

Bang Bang Chicken Skewers deliver a perfect balance of creamy, spicy, and tangy flavors on tender grilled chicken pieces. These skewers make a great appetizer or party snack.


Ingredients

1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes

2 tbsp olive oil

Salt and black pepper to taste

Wooden or metal skewers, soaked if wooden

For the Bang Bang Sauce:

1/2 cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp sriracha sauce (adjust to taste)

1 tsp honey

1 tsp rice vinegar

1 clove garlic, minced


Instructions

1. Preheat grill or grill pan to medium-high heat.

2. Thread chicken cubes onto skewers evenly.

3. Brush chicken with olive oil and season with salt and pepper.

4. Grill skewers for 4-5 minutes per side, until chicken is cooked through and has grill marks.

5. Meanwhile, whisk together all sauce ingredients in a bowl until smooth.

6. Remove skewers from grill and brush generously with Bang Bang Sauce.

7. Serve immediately, with extra sauce on the side for dipping.

Notes

For extra flavor, marinate chicken in some sauce for 30 minutes before grilling.

Serve with a side of fresh vegetables or over rice for a full meal.

Use a mix of red and green bell peppers on skewers for added color.
