Ingredients
2 medium sweet potatoes, peeled and diced
1 tbsp olive oil
1 tsp smoked paprika
1/2 tsp cumin
Salt and pepper to taste
1 can (15 oz) black beans, drained and rinsed
8 small corn or flour tortillas
1/4 cup chopped fresh cilantro
1/2 cup diced red onion
1 avocado, sliced
Lime wedges, for serving
Optional: salsa, vegan sour cream
Instructions
1. Preheat oven to 425°F (220°C).
2. Toss diced sweet potatoes with olive oil, smoked paprika, cumin, salt, and pepper.
3. Spread on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.
4. Warm tortillas in a skillet or oven.
5. Fill each tortilla with roasted sweet potatoes and black beans.
6. Top with chopped cilantro, diced red onion, and avocado slices.
7. Serve with lime wedges and optional salsa or vegan sour cream.
Notes
For extra protein, add cooked quinoa or tofu.
Use flour tortillas if you prefer a softer taco shell.
