Cajun Potato Soup combines creamy potatoes with bold spices and smoky flavors. This hearty, spicy soup warms you up and comforts your soul in every spoonful.
Ingredients
4 large potatoes, peeled and diced
1 medium onion, chopped
2 celery stalks, chopped
1 green bell pepper, diced
3 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
2 tbsp Cajun seasoning
1 tsp smoked paprika
1/2 tsp cayenne pepper (optional, for extra heat)
4 slices bacon, cooked and crumbled
2 tbsp olive oil
Salt and black pepper to taste
2 green onions, sliced for garnish
Shredded cheddar cheese (optional)
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onions, celery, and bell pepper; sauté until softened, about 5 minutes.
3. Stir in garlic, Cajun seasoning, smoked paprika, and cayenne; cook 1 minute until fragrant.
4. Add diced potatoes and chicken broth; bring to a boil.
5. Reduce heat and simmer until potatoes are tender, about 15 minutes.
6. Use an immersion blender to partially puree the soup, leaving some chunks for texture.
7. Stir in heavy cream and season with salt and black pepper.
8. Add crumbled bacon and cook for another 5 minutes.
9. Serve hot, garnished with green onions and shredded cheddar cheese if desired.
Notes
Use smoked sausage instead of bacon for a different twist.
Add a splash of hot sauce for more kick.
For a vegetarian version, replace chicken broth with vegetable broth and omit bacon.
