Description

Ingredients

12 oz linguine pasta

1 lb boneless, skinless chicken breasts (sliced)

Salt and black pepper to taste

1 tbsp olive oil

1/2 cup unsalted butter

5 garlic cloves, minced

1 tbsp Dijon mustard

1 tsp crushed red pepper flakes (adjust to taste)

1 tbsp lemon juice

1 tsp lemon zest

1 tbsp chopped fresh parsley

1 tsp dried thyme

1/2 tsp smoked paprika

1/2 tsp onion powder

1/2 tsp ground cumin

1/2 cup grated Parmesan (optional)


Instructions

1. Cook linguine in salted boiling water until al dente. Reserve 1/2 cup pasta water and drain.

2. Season chicken with salt and pepper. In a large skillet, heat olive oil over medium-high heat.

3. Sear chicken slices until browned and cooked through, about 4–6 minutes. Remove and set aside.

4. In the same skillet, melt butter. Add garlic and sauté for 1 minute until fragrant.

5. Stir in Dijon, red pepper flakes, lemon juice, zest, parsley, thyme, paprika, onion powder, and cumin. Simmer for 1–2 minutes.

6. Add cooked chicken back into the pan and toss to coat with cowboy butter sauce.

7. Add drained linguine and reserved pasta water as needed to loosen the sauce. Toss everything together.

8. Sprinkle with Parmesan if desired. Serve hot with extra parsley on top.

Notes

Use rotisserie chicken for a quick shortcut.

Add sautéed spinach or mushrooms for extra veggies.

For a creamier version, stir in 1/4 cup heavy cream or cream cheese with the sauce.
