Ingredients
1 tablespoon olive oil
1 pound Italian sausage (mild or spicy)
1 small onion, diced
3 cloves garlic, minced
4 cups chicken broth
1 (9 oz) package refrigerated cheese tortellini
1 (14.5 oz) can diced tomatoes
2 cups fresh spinach
1 cup heavy cream
½ teaspoon dried basil
Salt and pepper to taste
Parmesan cheese for garnish (optional)
Instructions
1. Heat olive oil in a large pot over medium heat. Add sausage and cook until browned. Drain excess fat.
2. Add diced onion and sauté until translucent. Stir in garlic and cook for 1 minute.
3. Pour in chicken broth and diced tomatoes. Bring to a boil.
4. Add tortellini and cook according to package instructions (about 7 minutes).
5. Reduce heat to low. Stir in spinach and heavy cream. Simmer for 2–3 minutes until spinach wilts.
6. Season with basil, salt, and pepper. Stir well.
7. Serve hot with grated Parmesan if desired.
Notes
Use kale instead of spinach for a heartier texture.
Swap heavy cream for half-and-half for a lighter version.
Add red pepper flakes for extra heat.
