Description
This Creamy Smothered Chicken Rice is a comforting one-pan dish featuring tender chicken, creamy sauce, and perfectly cooked rice. It’s soul-satisfying and easy enough for a weeknight dinner.
Ingredients
2 tablespoons olive oil
4 boneless, skinless chicken thighs
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 small onion, diced
2 garlic cloves, minced
1 cup long-grain white rice
2 cups chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon dried thyme
Fresh parsley, chopped (for garnish)
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Season chicken with salt, pepper, and paprika, then sear until golden brown (about 4 minutes per side). Remove and set aside.
3. In the same skillet, sauté onions until soft, then add garlic and cook for 30 seconds.
4. Add rice and stir to coat in the oil and aromatics.
5. Pour in chicken broth, cream, Parmesan, and thyme. Stir well.
6. Return chicken to the pan, nestling it into the rice mixture.
7. Cover and simmer on low heat for 20–25 minutes, until rice is tender and chicken is fully cooked.
8. Garnish with fresh parsley and serve hot.
Notes
Use chicken breasts if preferred, adjusting cook time.
Add mushrooms or spinach for extra veggies.
Store leftovers in an airtight container for up to 3 days.
