Description
This Crock Pot Chicken and Rice recipe is the perfect one-pot comfort food. Tender chicken, creamy rice, and simple seasonings come together in the slow cooker to make a hearty and satisfying meal with minimal effort.
Ingredients
2 lbs boneless, skinless chicken breasts or thighs
1 cup long grain white rice (uncooked)
1 small onion, chopped
2 garlic cloves, minced
1 can (10.5 oz) cream of chicken soup
1 can (10.5 oz) cream of mushroom soup
1 ½ cups low sodium chicken broth
1 tsp salt
½ tsp black pepper
1 tsp dried thyme
1 cup shredded cheddar cheese (optional)
Chopped parsley for garnish (optional)
Instructions
1. Spray the inside of your crock pot with non-stick cooking spray.
2. Place the chicken breasts (or thighs) into the crock pot.
3. In a bowl, mix the rice, onion, garlic, soups, chicken broth, salt, pepper, and thyme.
4. Pour the mixture over the chicken.
5. Cover and cook on low for 6–7 hours or on high for 3–4 hours.
6. Check that the rice is tender and the chicken is cooked through.
7. Shred the chicken with two forks directly in the crock pot or serve whole.
8. Stir in shredded cheese if using.
9. Garnish with chopped parsley before serving.
Notes
Use brown rice only if pre-cooked, as it takes longer to cook in a crock pot.
Add frozen peas or carrots in the last hour for extra veggies.
For extra creaminess, stir in a splash of milk at the end.
