Ingredients
1.5 lbs ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 large egg
1 tsp Worcestershire sauce
1 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
2 large onions, thinly sliced
4 cups beef broth
2 tsp Worcestershire sauce
1 tsp dried thyme
1 tbsp butter
1 tbsp all-purpose flour
Fresh parsley for garnish
Instructions
1. In a large bowl, combine ground beef, finely chopped onion, garlic, breadcrumbs, Parmesan, egg, Worcestershire sauce, salt, and pepper. Mix until combined.
2. Form mixture into 1.5-inch meatballs.
3. Heat olive oil in a skillet over medium heat. Brown meatballs on all sides, then transfer to crock pot.
4. In the same skillet, melt butter. Add sliced onions and cook, stirring often, until caramelized (about 15 minutes).
5. Sprinkle flour over onions and cook 1 more minute, stirring.
6. Add beef broth, Worcestershire sauce, and thyme. Stir to combine and bring to a simmer.
7. Pour onion sauce over meatballs in the crock pot.
8. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
9. Garnish with fresh parsley before serving.
Notes
For extra richness, add a splash of red wine to the onion sauce.
Serve over egg noodles or mashed potatoes for a complete meal.
