Crockpot Lasagna Soup is a cozy one-pot meal that captures all the classic flavors of lasagna in an easy, comforting soup. Rich tomato broth, tender pasta, hearty meat, and a cheesy topping make this a family favorite.
Ingredients
1 lb ground beef or Italian sausage
1 small onion, diced
3 cloves garlic, minced
1 (28 oz) can crushed tomatoes
1 (15 oz) can tomato sauce
4 cups beef broth
1 tsp dried basil
1 tsp dried oregano
1/2 tsp salt
1/4 tsp pepper
8 uncooked lasagna noodles, broken into pieces
1/2 cup ricotta cheese
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Fresh basil or parsley, for garnish
Instructions
1. In a skillet, cook ground beef and onion over medium heat until browned. Add garlic and sauté for 1 minute.
2. Transfer the mixture to the crockpot.
3. Add crushed tomatoes, tomato sauce, beef broth, basil, oregano, salt, and pepper. Stir to combine.
4. Cover and cook on low for 6–7 hours or high for 3–4 hours.
5. Add broken lasagna noodles to the crockpot in the last 30 minutes of cooking. Stir occasionally to prevent sticking.
6. In a bowl, mix ricotta, mozzarella, and Parmesan.
7. Ladle soup into bowls and top each serving with a scoop of the cheese mixture.
8. Garnish with chopped fresh basil or parsley before serving.
Notes
Use oven-ready lasagna noodles for quicker cooking.
You can swap ground beef with turkey or make it vegetarian with lentils or mushrooms.
For extra richness, stir in a splash of cream before serving.
