Ingredients
1 large cucumber, thinly sliced
1/2 cup cream cheese, softened
2 tablespoons mayonnaise
1 teaspoon lemon juice
1 tablespoon fresh dill, chopped
Salt and pepper to taste
8 slices white or whole wheat bread
Optional: lettuce leaves
Instructions
1. In a bowl, mix cream cheese, mayonnaise, lemon juice, dill, salt, and pepper until smooth.
2. Spread the cream cheese mixture evenly on each slice of bread.
3. Layer cucumber slices on half of the bread slices.
4. Top cucumber layers with lettuce leaves if desired.
5. Cover with remaining bread slices, cream cheese side down.
6. Cut sandwiches into halves or quarters.
7. Serve immediately or chill for 15 minutes for a refreshing taste.
