Description

These Mini Meatloaf Muffins are a fun, fast twist on the classic comfort food! Perfectly portioned, full of flavor, and topped with a tangy glaze, they’re great for weeknight dinners, lunchboxes, or meal prep.

For the Meatloaf:

  • 1 lb ground beef (or turkey)

  • 1/2 cup breadcrumbs

  • 1/4 cup milk

  • 1 egg

  • 1/4 cup onion, finely chopped

  • 1/2 tsp garlic powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/2 tsp Italian seasoning (optional)

For the Glaze:

  • 1/4 cup ketchup

  • 1 tbsp brown sugar

  • 1 tsp mustard or Worcestershire sauce (optional)


Instructions

  1. Preheat Oven: Preheat to 375°F (190°C). Lightly grease a 12-cup muffin tin.

  2. Mix Meatloaf: In a large bowl, combine all meatloaf ingredients. Mix until just combined—don’t overmix.

  3. Fill Muffin Tin: Divide the mixture evenly into the muffin cups.

  4. Add Glaze: In a small bowl, mix glaze ingredients. Spoon a bit over each mini meatloaf.

  5. Bake: Bake for 20–25 minutes, or until cooked through (internal temp 160°F/71°C).

  6. Cool & Serve: Let rest 5 minutes before serving. Enjoy warm!
