Description

These flaky spinach feta puff pastry squares are golden, crisp, and packed with creamy cheese and savory greens. They’re perfect as an appetizer, brunch item, or light snack.


Ingredients

1 sheet puff pastry (thawed)

1 tablespoon olive oil

1 small onion, finely chopped

2 garlic cloves, minced

5 oz fresh spinach (or 1/2 package frozen, thawed and drained)

1/2 cup crumbled feta cheese

1/4 cup cream cheese

1/2 teaspoon dried dill (optional)

1/4 teaspoon ground black pepper

1 egg, beaten (for egg wash)


Instructions

1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Heat olive oil in a skillet over medium heat. Sauté onion for 3–4 minutes until soft.

3. Add garlic and cook for 1 minute. Stir in spinach and cook until wilted (or heated through if using frozen).

4. Remove from heat. Let cool slightly, then mix in feta, cream cheese, dill, and pepper.

5. Roll out puff pastry slightly and cut into 6 squares.

6. Place a spoonful of spinach-feta mixture in the center of each square.

7. Fold each square into a triangle or rectangle and press edges with a fork to seal.

8. Brush tops with beaten egg.

9. Bake for 18–22 minutes or until golden and puffed.

10. Cool slightly and serve warm.

Notes

You can freeze these unbaked and bake from frozen—just add 5 extra minutes.

Add chopped sun-dried tomatoes or olives for extra flavor.

Serve with tzatziki or garlic yogurt sauce for dipping.
