Ingredients
1 baguette, sliced into 1/2-inch rounds
2 tablespoons olive oil
1 ripe avocado
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1/4 teaspoon black pepper
12 large shrimp, peeled and deveined
2 garlic cloves, minced
1 tablespoon butter
1 tablespoon chopped parsley (optional)
Instructions
1. Preheat oven to 375°F (190°C). Brush baguette slices with olive oil and toast for 8–10 minutes until golden.
2. In a bowl, mash avocado with lemon juice, salt, and pepper. Set aside.
3. In a skillet, melt butter over medium heat. Add garlic and sauté for 30 seconds.
4. Add shrimp and cook 2–3 minutes per side until opaque and pink.
5. Spread avocado mixture over toasted baguette slices.
6. Top each with a cooked shrimp.
7. Garnish with chopped parsley if desired.
8. Serve immediately.
Notes
Use fresh baguette for best texture.
Add a pinch of red pepper flakes for extra heat.
