Ingredients
4 large russet potatoes, cut into thick wedges
2 tbsp olive oil
1 tsp dried oregano
1 tsp garlic powder
Salt and pepper to taste
1/2 cup crumbled feta cheese
1/4 cup chopped Kalamata olives
1/2 cup cherry tomatoes, halved
1/4 small red onion, thinly sliced
2 tbsp chopped fresh parsley
1/2 cup tzatziki sauce (for drizzling or dipping)
Instructions
1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
2. Toss potato wedges with olive oil, oregano, garlic powder, salt, and pepper.
3. Spread evenly on the baking sheet and roast for 35–40 minutes, flipping halfway through, until golden and crispy.
4. Remove from oven and transfer to a serving plate.
