These Mediterranean Spinach and Feta Cheese Crisps blend flaky pastry with savory spinach, feta, and herbs for an irresistible appetizer or snack.
Ingredients
1 package (16 oz) frozen chopped spinach, thawed and drained
1 cup crumbled feta cheese
1/2 cup finely chopped onion
2 cloves garlic, minced
2 tablespoons fresh dill, chopped
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1 package (17 oz) phyllo dough, thawed
1/2 cup melted butter or olive oil for brushing
Instructions
1. Preheat oven to 375°F (190°C).
2. In a large bowl, combine spinach, feta, onion, garlic, dill, oregano, salt, and pepper.
3. Lay one sheet of phyllo dough on a baking sheet; brush with melted butter or olive oil.
4. Layer 4-5 more sheets, brushing each with butter or oil.
5. Spread spinach mixture evenly over the top.
6. Fold or roll phyllo dough over filling to create crisps.
7. Cut into squares or triangles.
8. Bake 20-25 minutes until golden and crispy.
9. Let cool slightly before serving.
Notes
Keep phyllo dough covered with a damp towel to prevent drying.
Use fresh herbs when possible for best flavor.
Serve with tzatziki or your favorite dip.
