This one-pan Mediterranean chicken is bursting with bright flavors from garlic, lemon, olives, and juicy tomatoes. A quick and easy weeknight dinner that’s healthy, hearty, and full of Mediterranean flair—all made in a single skillet!
Ingredients

1.5 lbs boneless, skinless chicken thighs or breasts

1 tbsp olive oil

1 tsp dried oregano

1/2 tsp paprika

Salt and black pepper, to taste

1 red onion, sliced

1 cup cherry tomatoes, halved

1/2 cup kalamata olives, pitted

1/4 cup crumbled feta cheese

Juice of 1 lemon

Fresh parsley, for garnish (optional)
Instructions

Season and Sear Chicken:
Season chicken with oregano, paprika, salt, and pepper. In a large skillet, heat olive oil over medium-high heat. Sear chicken 3–4 minutes per side until golden. Remove and set aside. -
Cook Vegetables:
In the same skillet, add red onion and sauté 2–3 minutes until soft. Add tomatoes and cook another 3 minutes until slightly blistered. -
Combine and Finish:
Return chicken to the skillet. Add olives and lemon juice. Cover and simmer 10–15 minutes until chicken is cooked through. Sprinkle with feta and garnish with parsley. -
Serve:
Serve warm as-is or over rice, couscous, or quinoa.
