Description

Ingredients

1/2 teaspoon baking powder

1/4 teaspoon salt

3/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 cup crushed pineapple, drained

1/4 cup brown sugar

1 teaspoon ground cinnamon


Instructions

1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. In a medium bowl, whisk together flour, baking powder, and salt.

3. In a large bowl, cream butter and granulated sugar until light and fluffy.

4. Beat in egg and vanilla extract.

5. Gradually add dry ingredients to wet ingredients, mixing until combined.

6. In a small bowl, mix crushed pineapple, brown sugar, and cinnamon.

7. Scoop cookie dough onto baking sheet, flatten slightly.

8. Top each cookie with a spoonful of the pineapple mixture.

9. Bake for 12–15 minutes or until edges are golden.

10. Cool on wire racks before serving.

Notes

Use fresh pineapple if preferred, finely chopped.

For extra tropical flavor, add shredded coconut to dough.
