  • 1 cup whole milk ricotta cheese

  • Salt & pepper, to taste

For the Marinated Tomatoes:

  • 1 cup cherry tomatoes, halved

  • 1 tbsp balsamic vinegar

  • 1 tbsp olive oil

  • 1 small garlic clove, minced

  • 1 tsp fresh thyme or basil (optional)

  • Salt & pepper, to taste

For the Toast:

  • 4 slices rustic bread (sourdough or ciabatta)

  • Olive oil, for brushing

Optional toppings: red pepper flakes, flaky sea salt, fresh herbs


Instructions

  1. Marinate Tomatoes:
    In a bowl, combine halved cherry tomatoes with olive oil, balsamic vinegar, garlic, herbs, salt, and pepper. Let sit for 10–15 minutes.

  2. Make Whipped Ricotta:
    In a food processor or using a hand mixer, blend ricotta with olive oil, salt, and pepper until smooth and creamy (about 1–2 minutes).

  3. Toast Bread:
    Brush bread slices with olive oil and toast in a skillet or oven until golden and crisp.

  4. Assemble Toasts:
    Spread whipped ricotta generously over warm toast. Top with marinated tomatoes and a drizzle of the marinade.

  5. Garnish & Serve:
    Finish with red pepper flakes, sea salt, or fresh herbs if desired. Serve immediately.

Notes

  • For extra flavor, add a smear of pesto or a drizzle of hot honey.

  • Use heirloom or grape tomatoes for variety and color.
