Description
Zucchini Cheese Bread blends tender shredded zucchini with sharp cheddar cheese in a savory, moist quick bread. It’s easy to make and perfect as a snack, side dish, or even a light breakfast.
Ingredients
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon garlic powder (optional)
2 large eggs
1/3 cup vegetable oil
1/2 cup milk
1 1/2 cups shredded zucchini (squeeze out excess moisture)
1 1/2 cups shredded sharp cheddar cheese
2 tablespoons chopped fresh chives or green onions (optional)
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and garlic powder.
3. In another bowl, beat eggs, then mix in oil and milk.
4. Stir wet ingredients into dry ingredients until just combined.
5. Fold in shredded zucchini, cheese, and chives.
6. Pour batter into the prepared loaf pan and smooth the top.
7. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
9. Slice and serve warm or at room temperature.
Notes
Use a mix of cheddar and parmesan for extra flavor.
Don’t skip squeezing the zucchini—it prevents soggy bread.
Wrap leftovers tightly and store in the fridge for up to 5 days.
